  • 2½ tbsp chopped10 gFresh parsleychopped
  • ⅓ cup leaves8 gFresh basiltorn
  • ¼ tsp2 gSalt
  • ½ tsp1 gBlack pepper

Steps

  1. Prep first: halve the cherry tomatoes, mince the garlic, chop the parsley, tear the basil, shred the mozzarella and split the whole-wheat bread rolls in half. Pat the shrimp dry and season with the salt and black pepper.
  2. Heat a large skillet over medium heat. Brush the cut sides of the whole-wheat bread rolls with one third of the olive oil and toast them cut side down until golden, 2 to 3 minutes. Set the toasted whole-wheat roll halves aside, cut side up, on a plate.
  3. Add another third of the olive oil to the skillet over medium-high heat. Add the cherry tomatoes and cook until blistered and saucy, about 4 minutes. Transfer to a bowl.
  4. Add the remaining third of the olive oil, the garlic and the red pepper flakes to the skillet and cook 30 seconds until fragrant. Add the shrimp and cook about 2 minutes per side until pink and opaque, 145°F (63°C).
  5. Return the tomatoes to the skillet, stir in the lemon juice, lemon zest and parsley, and take the skillet off the heat. Spoon the shrimp and tomatoes into a bowl and wipe out the skillet.
  6. Spoon the shrimp and tomatoes over the toasted whole-wheat roll halves and scatter the mozzarella on top. Return the toasts to the skillet, cover with a lid over low heat for 2 to 3 minutes until the cheese melts.
  7. Top with the basil and serve two open toasts per person.
