  • 1 tsp1 gDried oregano
  • ¼ tsp2 gSalt
  • ½ tsp1 gBlack pepper
  • 1½ tbsp20 gOlive oildivided
  • 1 whole200 gAvocadopitted and scooped
  • 1 tbsp15 gLime juice
  • ½ medium60 gRed onionthinly sliced
  • 8 slices256 gWhole-wheat bread8 slices; use sourdough slices if you have them
  • 1½ tbsp20 gYellow mustard
  • 1⅓ cups loosely packed40 gBaby spinach
  • 3 oz90 gPart-skim mozzarellathinly sliced or shredded

Steps

  1. Pat the pork tenderloin dry. Mix the cumin, garlic powder, oregano, three-quarters of the salt and the black pepper, and rub it all over the pork.
  2. Heat half of the olive oil in a large skillet over medium-high heat. Sear the pork on all sides, then lower the heat to medium, cover and cook, turning occasionally, until it reaches 145°F (63°C) inside, 15 to 20 minutes. Rest it on a board for at least 3 minutes, then slice thinly.
  3. While the pork rests, mash the avocado with the lime juice and the remaining quarter of the salt.
  4. Wipe out the skillet and cook the red onion over medium heat for 3 minutes until just softened; move it to a plate.
  5. Lay out the bread slices. Spread the mustard on 4 slices and the avocado mash on the other 4.
  6. On the mustard slices, layer the sliced pork, red onion, spinach and mozzarella, then top with the avocado slices, avocado side down.
  7. Brush the outsides of the sandwiches with the remaining half of the olive oil.
  8. Cook the sandwiches in the skillet over medium-low heat, pressing gently with a spatula, 3 to 4 minutes per side until the bread is golden and the mozzarella melts. Work in batches if needed, cut in half and serve hot.
