- 4 oz110 gDiced green chiles, canned
- 1 cup136 gCorn kernels, frozen
- 1½ tbsp20 gOlive oil

- 2 tsp2 gDried oregano
- 1⅛ tsp2 gGround coriander
- ¼ tsp2 gSalt
- ½ tsp1 gBlack pepper
- 2 tbsp30 gLime juice
- ⅔ cup chopped10 gFresh cilantrochopped
- 4 oz120 gPlain Greek yogurt, nonfat
Steps
- Prep first: dice the onion and green bell pepper, mince the jalapeño and garlic, cut the cod fillet into 1.5-inch chunks and chop the cilantro. Keep the cod chilled until step 6.
- Heat the olive oil in a Dutch oven over medium heat. Add the onion, green bell pepper and jalapeño and cook, stirring, until soft, about 7 minutes.
- Stir in the garlic, cumin, oregano and coriander and cook 1 minute until fragrant.
- Add the green chiles, great northern beans and vegetable broth. Bring to a boil, then lower to a simmer for 15 minutes.
- Scoop out about one quarter of the beans with some broth, mash them with a fork, and stir them back in to thicken the chili.
- Stir the frozen corn kernels into the chili and return to a simmer, about 2 minutes.
- Sprinkle the cod chunks with the salt and black pepper, then nestle the cod into the chili. Cover and simmer gently, without stirring, 6 to 8 minutes, until the cod flakes easily and reaches 145°F (63°C).
- Gently stir in the lime juice so the cod stays in large flakes.
- Ladle into bowls and top each with a spoonful of the Greek yogurt and a sprinkle of the cilantro.
