- 1⅔ cups360 gVegetable broth
- 2 cups376 gLima beans (butter beans), canned, drainedrinsed
- ½ tsp3 gSalt
- ½ tsp1 gBlack pepper
- ¼ cup chopped15 gFresh parsleychopped
- 1 tbsp15 gLemon juice
Steps
- Preheat the oven to 325°F (165°C). Prepare the pork, onion, bell pepper, garlic and parsley before you start cooking.
- Pat the pork dry and season it with half the salt and all the black pepper.
- Heat half the olive oil in a Dutch oven over medium-high heat. Brown half the pork on all sides, about 6 minutes, and move it to a plate; add the remaining half of the olive oil and brown the rest of the pork the same way.
- Lower the heat to medium. Add the onion and bell pepper to the pot and cook until soft, about 6 minutes.
- Stir in the garlic, tomato paste, smoked paprika and oregano and cook for 1 minute until fragrant.
- Pour in the canned tomatoes and the vegetable broth, scraping up the browned bits. Return the pork and its juices to the pot and add the remaining half of the salt.
- Bring to a simmer, cover and braise in the oven for 1 hour 30 minutes.
- Stir in the lima beans and return the pot to the oven uncovered for 15 minutes, until the pork is fork-tender (well past 145°F (63°C)) and the sauce has thickened.
- Stir in the lemon juice, scatter the parsley over the top and serve.
