- ½ tsp3 gSalt

Steps
- Prep first: dice the onion, slice the carrot, mince the garlic, cut the zucchini into half-moons, chop the parsley and cut the chicken thighs into 1-inch pieces. Season the chicken with half the salt and the black pepper.
- Heat half the olive oil in a large pot over medium-high heat. Brown the chicken in one layer, about 5 minutes, then move it to a plate.
- Add the remaining half of the olive oil, the onion and the carrot to the pot and cook 5 minutes until softened. Stir in the garlic, rosemary and red pepper flakes for 30 seconds, then the tomato paste for 1 minute.
- Pour in the canned tomatoes and chicken broth, scraping up the browned bits. Return the chicken and its juices, add the remaining half of the salt, bring to a boil, then cover and simmer gently for 20 minutes.
- Stir in the white beans and zucchini and simmer uncovered 10 to 12 minutes, until the zucchini is tender, the stew has thickened and the chicken reaches 165°F (74°C).
- Off the heat, stir in the lemon juice. Ladle into bowls and top with the parsley and Parmesan.
