Steps

  1. Prep first: finely grate half of the red onion and thinly slice the other half; mince the garlic, quarter the cherry tomatoes, dice the cucumber, chop the parsley, tear the mint and crumble the feta.
  2. Make the salad: in a bowl, toss the cherry tomatoes, cucumber, sliced red onion and parsley with the lemon juice, half of the olive oil and a pinch of the salt. Set aside.
  3. Season the pork: in another bowl, mix the ground pork with the grated red onion, garlic, cumin, coriander, paprika, cinnamon, black pepper and the remaining salt.
  4. Brush the pitas with the remaining half of the olive oil and toast them one at a time in a large dry skillet over medium-high heat, about 1 minute per side, until crisp and spotted. Set aside on plates.
  5. In the same skillet over medium-high heat, cook the pork mixture, pressing it into a thin layer and letting it brown before breaking it into crumbly pieces, 7–9 minutes, until it reaches 160°F (71°C).
  6. Pile the spiced pork onto the toasted pitas, spoon the tomato-cucumber salad over the top, and finish with the feta and mint. Serve open-faced right away.
