Steps
- Press the tofu, cut it into cubes, and toss it with the cornstarch until lightly coated.
- Heat half of the canola oil in a Dutch oven over medium-high heat. Sear the tofu in a single layer, turning, until golden and crisp on most sides, 8 to 10 minutes. Transfer to a plate.
- Lower the heat to medium and add the remaining half of the canola oil. Add the onion, green bell pepper and jalapeño and cook until softened, about 6 minutes.
- Stir in the garlic, tomato paste, smoked paprika, cumin, oregano and chili powder and cook 1 minute until fragrant and the paste darkens.
- Add the canned diced tomatoes and vegetable broth, scraping up the browned bits. Bring to a simmer, cover partly and cook 15 minutes, stirring now and then.
- Stir in the black beans, the frozen corn kernels and the salt, then return the seared tofu to the pot. Simmer uncovered 10 minutes until thick and the corn is hot and tender.
- Off the heat, stir in the lime juice. Ladle into bowls and top with the cilantro and avocado.
