  • ½ tsp3 gSalt
  • ½ tsp1 gBlack pepper
  • 2 tbsp30 gLime juice
  • 1 cup chopped16 gFresh cilantrochopped
  • 1 cup diced150 gAvocadodiced

Steps

  1. Prep first: dice the onion and green bell pepper, seed and mince the jalapeño, mince the garlic, cube the red potatoes and chop the cilantro. Cut the cod fillets into 2-inch pieces and keep the cod fillet pieces refrigerated until step 6.
  2. Heat the olive oil in a Dutch oven over medium heat. Add the onion, green bell pepper and jalapeño and cook until soft, about 6 minutes.
  3. Stir in the garlic, cumin, dried oregano and smoked paprika and cook for 1 minute until fragrant.
  4. Add the vegetable broth, diced tomatoes with their juice, green chiles and red potatoes. Bring to a boil, then cover and simmer until the potatoes are just tender, about 15 minutes.
  5. Stir the frozen corn kernels into the stew and simmer 3 minutes.
  6. Season the cod fillet pieces with half the salt and all the black pepper. Nestle the cod fillet pieces into the stew, cover and simmer gently without stirring until the cod flakes and reaches 145°F (63°C), 6 to 8 minutes.
  7. Gently stir in the lime juice and the remaining half of the salt so the cod stays in large flakes.
  8. Ladle into bowls and top with the diced avocado and chopped cilantro.
