  • 2½ tsp6 gPaprika (sweet or smoked)smoked

  • 1 tsp3 gGarlic powder
  • ¾ tsp4 gSaltdivided
  • ½ tsp1 gBlack pepper
  • 2 cups loosely packed60 gBaby spinach
  • ¼ cup chopped15 gFresh parsleychopped

Steps

  1. Make the hummus first: in a bowl, mash the chickpeas with a fork or potato masher until mostly smooth, then stir in the tahini, three-quarters of the lemon juice, the garlic, the water and one-third of the salt until creamy. Set aside.
  2. In a small bowl, mix the smoked paprika, cumin, garlic powder, black pepper and the remaining two-thirds of the salt. Rub the spice mix all over the chicken thighs.
  3. Heat half of the olive oil in a large skillet over medium-high heat. Add the bell pepper and red onion and cook, stirring now and then, until charred at the edges and soft, 6 to 8 minutes. Transfer to a plate.
  4. Add the remaining half of the olive oil to the skillet, then the chicken thighs. Cook 5 to 7 minutes per side until well browned and 165°F (74°C) in the thickest part. Rest 5 minutes, then slice into strips.
  5. While the chicken rests, toast the bread slices in the dry skillet over medium heat, 1 to 2 minutes per side, until crisp.
  6. Spread the hummus over the toasts and top each with spinach, the sliced chicken and the peppers and onions.
  7. Drizzle the toasts with the remaining one-quarter of the lemon juice, scatter over the parsley and serve 2 toasts per person.
