Steps
- Prepare all the vegetables, the apple and the parsley first, and set them aside.
- Pat the pork shoulder dry, then toss it in a bowl with the flour, half the salt and the black pepper.
- Heat half the canola oil in a Dutch oven over medium-high heat. Brown half the pork on all sides, about 6 minutes, and move it to a plate. Add the remaining half of the canola oil and brown the rest of the pork the same way.
- Lower the heat to medium. Add the onion and cook, stirring, until soft and golden, about 6 minutes. Stir in the garlic, thyme and paprika and cook 1 minute.
- Stir in the mustard, then pour in the vegetable broth and cider vinegar, scraping up the browned bits from the bottom.
- Return the pork and its juices to the pot. Bring to a boil, cover, reduce the heat to low and simmer 60 minutes, until the pork is nearly tender.
- Add the potato, carrot and the remaining half of the salt. Cover and simmer 20 minutes.
- Lay the cabbage and apple on top, cover and simmer 15 minutes more, until the vegetables are tender and the pork is fork-tender and well past 145°F (63°C).
- Stir gently, rest the stew off the heat for 5 minutes, then ladle into bowls and sprinkle with the parsley.
