Kefir Cornmeal Blueberry Sheet-Pan Waffles

Ingredients

  • 1½ cups (350 ml)360 gPlain kefir, low-fat
  • 1 container (6 oz)170 gPlain Greek yogurt, nonfat
  • 1 cup120 gWhole wheat flour
  • ½ cup60 gYellow cornmeal, whole-grain
  • 2 large100 gEggslightly beaten
  • 1¼ cups180 gBlueberries
  • 2 tbsp28 gCanola oilplus a little for the pan
  • 2 tbsp40 gMaple syrup
  • 1¾ tsp8 gBaking powder
  • ½ tsp2 gBaking soda
  • ¼ tsp2 gSalt
  • 1⅛ tsp3 gGround cinnamon
  • 1 tsp4 gVanilla extract
  • ¼ cup64 gAlmond butter, no salt added
  • 2 tbsp30 gWaterwarm

Steps

  1. Preheat the oven to 425°F (220°C). Brush a rimmed half-sheet pan with a little of the canola oil, line it with parchment, and brush the parchment too.
  2. In a large bowl, whisk the whole wheat flour, cornmeal, baking powder, baking soda, salt and half of the cinnamon.
  3. In a second bowl, whisk the kefir, half of the Greek yogurt, the eggs, the rest of the canola oil, half of the maple syrup and the vanilla until smooth.
  4. Pour the kefir mixture into the flour mixture and stir just until no dry streaks remain; let it rest 5 minutes so the cornmeal softens.
  5. Gently fold in the blueberries, then spread the batter evenly in the prepared pan.
  6. Bake 15 to 18 minutes, until golden, the edges are crisp and a toothpick in the center comes out clean. Switch the oven to broil for 1 to 2 minutes to crisp the top, watching closely.
  7. While it bakes, stir the almond butter with the warm water, the remaining half of the maple syrup and the remaining half of the cinnamon into a pourable sauce.
  8. Cool the waffle in the pan for 3 minutes, cut it into 8 squares and serve 2 per person with a spoonful of the remaining half of the Greek yogurt and a drizzle of the almond butter sauce.
