- 1½ tbsp24 gUnsalted butter
- 3½ tbsp whole30 gAlmondssliced
- 3 tbsp60 gMaple syrup
Steps
- Put the oats in a blender and blend to a fine flour.
- Add the milk, eggs, cardamom, vanilla, baking powder and salt to the blender and blend until very smooth and pourable; let the batter rest 10 minutes to thicken slightly.
- While the batter rests, toast the almonds in a dry nonstick skillet over medium heat for 3 to 4 minutes until golden, then set aside.
- Melt one third of the butter in the skillet over medium heat, add the banana coins in a single layer and cook 1 to 2 minutes per side until caramelized; transfer to a plate.
- Wipe the skillet lightly, then melt a small piece of the remaining butter in it over medium heat, using a little before each pancake until the butter is used up.
- Pour about 1/4 cup of batter into the skillet and swirl to coat thinly; cook about 1 1/2 minutes until set and lightly browned, flip, and cook 1 minute more until the center is fully set and reaches 160°F (71°C). Repeat with the remaining batter, stirring it between pancakes.
- Warm the maple syrup in a small cup in the hot skillet's residual heat or briefly in a small saucepan.
- Fold each pancake into quarters, top with the caramelized banana and toasted almonds, and drizzle with the warm maple syrup.
