- ¾ cup200 gPart-skim ricotta

- 2 large100 gEggs
- 1½ tbsp20 gGranulated sugar
- 1 tsp4 gVanilla extract

- 2 medium236 gBananasliced into thin coins
- ¼ cup64 gAlmond butter, no salt added
- 1 tbsp20 gHoney
- 1½ tbsp20 gWaterwarm
- ¼ cup chopped28 gWalnutschopped
Steps
- Preheat the oven to 425°F (220°C). Melt the butter and set it aside.
- Brush a rimmed half-sheet pan with half of the melted butter, line it with parchment, then brush the parchment with a little of the remaining butter, saving the rest for the batter.
- In a large bowl, whisk the flour, baking powder, baking soda, salt and cardamom.
- In a second bowl, whisk the ricotta, kefir, eggs, sugar, vanilla and the rest of the melted butter until smooth.
- Pour the wet mixture into the dry mixture and fold gently just until no dry streaks remain; a few lumps keep the pancakes fluffy.
- Fold about half of the banana slices into the batter, then spread the batter evenly in the pan and scatter the remaining banana slices over the top.
- Bake 15 to 18 minutes, until puffed, golden at the edges and a toothpick in the center comes out clean and the center reaches 160°F (71°C).
- While it bakes, stir the almond butter, honey and warm water in a small bowl into a smooth, pourable drizzle.
- Cool the pancake 5 minutes, cut into 8 squares, and serve 2 per plate with the almond butter drizzle and the walnuts sprinkled on top.
