- ¼ cup50 gOlive oil
- ¼ cup60 gLemon juice
- 2 tsp4 gLemon zest
- 2 cloves6 gGarlicminced
- 1 tbsp3 gDried oregano
- 1¼ tsp3 gPaprika (sweet or smoked)
- ¾ tsp4 gSalt
- ½ tsp1 gBlack pepper
Steps
- Put the bulgur in a large bowl, pour the boiling water over it, cover and let stand 20 minutes until tender; fluff with a fork and let cool.
- Meanwhile, make the dressing: whisk the lemon juice, lemon zest, garlic, half of the salt, half of the black pepper and 40 g of the olive oil (most of it) in a small bowl. Set aside.
- Preheat the grill to medium-high, about 425°F (220°C), and oil the grates.
- Rub the pork tenderloin with the remaining 10 g of olive oil, then season it with the oregano, paprika, the remaining half of the salt and the remaining half of the black pepper.
- Grill the pork, turning every few minutes, for 15 to 20 minutes until it reaches 145°F (63°C) in the thickest part. Rest it 5 minutes (at least 3), then cut it into bite-size cubes.
- While the pork rests, add the romaine, cucumber, cherry tomatoes, red onion, parsley and olives to the bowl of cooled bulgur.
- Pour the dressing over the salad and toss well.
- Divide the salad among four plates, top with the pork and sprinkle with the feta.
