  • 2 cups loosely packed60 gBaby spinachfinely chopped
  • ½ medium60 gRed oniondivided: half minced, half thinly sliced
  • ⅓ cup crumbled50 gFeta cheesecrumbled
  • 2 tsp2 gDried oregano
  • ½ tsp1 gGround cumin
  • ½ tsp1 gBlack pepper
  • ¼ tsp2 gSaltdivided
  • 3 oz80 gPart-skim mozzarellathinly sliced or shredded
  • ¾ cup chopped150 gTomatoesthinly sliced
  • 1½ tbsp20 gOlive oildivided

Steps

  1. Make the spread first: stir the Greek yogurt, dill, mint, lemon juice, one third of the garlic and a pinch (about a quarter) of the salt in a small bowl. Chill until needed.
  2. Prep the vegetables: mince half the red onion and thinly slice the other half; finely chop the spinach; slice the tomato.
  3. In a large bowl, gently mix the ground turkey with the minced red onion, the spinach, the feta, the remaining two thirds of the garlic, the oregano, cumin, black pepper and the remaining salt. Shape into 4 thin oval patties about the size of a bread slice.
  4. Heat half the olive oil in a large skillet over medium heat. Cook the patties 4 to 5 minutes per side until browned and they reach 165°F (74°C) in the center. Lay the mozzarella over the patties for the last 2 minutes, cover the pan to melt it, then move the patties to a plate and wipe the skillet.
  5. Brush one side of each bread slice with the remaining olive oil. Toast the slices oiled side down in the skillet over medium heat for 2 to 3 minutes until golden, working in batches.
  6. Spread the yogurt spread over the untoasted sides of all 8 slices. Top 4 slices with a cheesy turkey patty, the tomato slices and the sliced red onion, then close with the other 4 slices, toasted side out.
  7. Return each melt to the skillet for 1 minute per side, pressing lightly, to warm through. Halve and serve hot.
