Steps
- If using wooden skewers, soak 8 of them in water for 30 minutes.
- Make the marinade: in a large bowl stir together half the olive oil, the cumin, the coriander, the paprika, two-thirds of the garlic, half the lemon juice, half the salt and the black pepper.
- Add the pork to the marinade, toss to coat and let it sit 20 minutes while you cook the bulgur.
- Bring the water and a quarter of the salt to a boil in a pot, stir in the bulgur, cover, reduce heat and simmer 12 minutes, then let it stand covered off the heat.
- Make the sauce: stir the Greek yogurt, the mint, the remaining garlic and a quarter of the lemon juice together and chill until serving.
- Preheat the grill to medium-high, about 425°F (220°C).
- Thread the pork, red bell pepper, green bell pepper and red onion alternately onto the skewers.
- Toss the broccoli with the remaining olive oil and remaining salt, and place it in a grill basket.
- Grill the skewers and the broccoli basket 10 to 14 minutes, turning every few minutes, until the vegetables are charred and the pork reaches 145°F (63°C); rest the skewers 3 minutes.
- Fluff the bulgur, fold in the grilled broccoli and the remaining lemon juice.
- Serve the skewers over the broccoli bulgur with the yogurt-mint sauce on the side.
