Steps

  1. If using wooden skewers, soak 8 of them in water for 30 minutes.
  2. Make the marinade: in a large bowl whisk half the olive oil, two-thirds of the garlic, the rosemary, the thyme, half the lemon juice, half the salt and the black pepper. Toss the pork in it and let it sit while you prepare the vegetables.
  3. Put the potatoes and carrots in a pot of cold water, bring to a boil and simmer 8 minutes until just tender at the edges; drain and let steam dry.
  4. Toss the potatoes, carrots and red onion with one-third of the remaining olive oil and the rest of the salt.
  5. Preheat the grill to medium-high, about 425°F (220°C), and oil the grates.
  6. Thread the pork onto 4 skewers and the potatoes, carrots and red onion onto the other 4 skewers.
  7. Grill the vegetable skewers 12 to 15 minutes, turning often, until browned and tender.
  8. Grill the pork skewers 10 to 12 minutes, turning every few minutes, until the pork reaches 145°F (63°C); rest 3 minutes.
  9. Make the drizzle: whisk the remaining olive oil, the remaining garlic, the remaining lemon juice, the mustard and the parsley.
  10. Spoon the drizzle over the pork and vegetable skewers and serve one of each per plate.
