- 2 cups354 gGreat northern or cannellini beans, canned, drained and rinsed
- 4 cups960 gLow-sodium chicken broth
- 1 tsp1 gDried thyme
- 8 cups loosely packed240 gBaby spinach
- ¼ cup chopped15 gFresh parsleyleaves only
- 2 tbsp30 gLemon juice
- 7 oz200 gPlain Greek yogurt, nonfat
- ½ tsp3 gSalt
- ½ tsp1 gBlack pepper
- ⅓ cup40 gPumpkin seeds (pepitas)
Steps
- Prep first: chop the onion and celery, mince the garlic, peel and cube the potato, and drain and rinse the great northern beans.
- Toast the pumpkin seeds in a dry large pot over medium heat, stirring, until they pop and smell nutty, 3 to 4 minutes; tip them into a bowl and set aside for garnish.
- In the same pot, warm the olive oil over medium heat. Add the onion and celery and cook until soft, about 6 minutes. Stir in the garlic and thyme and cook 1 minute.
- Add the potato, great northern beans and chicken broth. Bring to a boil, then cover and simmer until the potato is very tender, about 15 minutes.
- Turn off the heat. Stir in the spinach and parsley until wilted, about 2 minutes.
- Blend the soup until smooth with an immersion blender, or in a countertop blender in batches with the lid vented.
- Divide the Greek yogurt in half. Whisk the first half with a ladle of the hot soup in a bowl, then stir it back into the pot with the lemon juice, salt and black pepper. Warm gently without boiling.
- Ladle into 4 bowls and top each with a spoonful of the remaining half of the Greek yogurt and the toasted pumpkin seeds.
