- ⅛ tsp1 gSalt
Steps
- Prepare all ingredients first: slice the mushrooms, red onion, bok choy and jalapeño, mince the garlic, grate the ginger, chop the cilantro and cut the cod fillet into 2-inch pieces.
- Heat the canola oil in a large pot over medium-high heat. Add the mushrooms and cook without stirring for 3 minutes, then stir and cook 3 minutes more until browned.
- Add the red onion and cook 3 minutes until softened. Stir in the garlic, ginger, half the jalapeño, the turmeric and the coriander and cook 1 minute until fragrant.
- Pour in the chicken broth, water and coconut milk, add the fish sauce and bring to a gentle simmer for 8 minutes.
- Add the rice noodles and simmer 4 minutes, stirring to separate them.
- Season the cod fillet pieces with the salt. Add the bok choy to the pot, then nestle in the cod fillet pieces. Cover and simmer gently 5 to 6 minutes until the cod flakes easily and reaches 145°F (63°C).
- Turn off the heat and stir in the lime juice gently so the cod stays in large flakes.
- Ladle into bowls and top with the cilantro and the remaining half of the jalapeño.
