- ⅓ cup grated30 gGrated Parmesan
- 1 tbsp15 gLemon juice

Steps
- Prepare all the vegetables first. Cut the cod fillet into 1-inch chunks and keep the cod fillet chunks in the fridge until step 6.
- Heat the olive oil in a Dutch oven over medium heat. Add the onion, celery and carrot and cook, stirring, until soft, about 7 minutes. Stir in the garlic for 1 minute.
- Add the potato, cauliflower, chicken broth and thyme. Bring to a boil, then cover and simmer until the potato and cauliflower are very tender, about 15 minutes.
- Scoop out about half of the soup and blend it until smooth with an immersion or countertop blender (vent the lid and cover with a towel), then return the purée to the pot so the rest stays chunky.
- Stir in the milk, zucchini and cherry tomatoes and bring back to a gentle simmer; cook 4 minutes until the zucchini is just tender.
- Nestle the cod fillet chunks into the soup and simmer gently without stirring until the cod flakes easily and reaches 145°F (63°C), about 5 minutes.
- Turn off the heat. Gently stir in the Parmesan, lemon juice, salt and black pepper.
- Ladle into bowls and scatter the basil over the top.
