Steps
- Prep first: slice the onion, mince the garlic and jalapeño, chop the cilantro, and pat the chicken thighs dry. Leave the frozen corn kernels in the freezer until step 6.
- Heat the olive oil in a Dutch oven over medium-high heat. Brown the chicken thighs about 3 minutes per side, then move them to a plate.
- Lower the heat to medium. Add the onion and cook 5 minutes until soft, then stir in the garlic and jalapeño for 1 minute.
- Stir in the chili powder, smoked paprika, cumin, oregano and tomato paste and cook 1 minute until fragrant and darker.
- Add the canned tomatoes and chicken broth, scraping up the browned bits. Return the chicken thighs and any juices, bring to a boil, then cover and simmer gently 30 minutes, until the chicken reaches 165°F (74°C).
- Lift out the chicken, shred it with two forks and return it to the pot. Stir in the black beans, the frozen corn kernels and the salt, and simmer uncovered 10 minutes until the corn is hot and the stew thickens.
- Off the heat, stir in the lime juice and half of the cilantro. Ladle into bowls and top with the diced avocado and the remaining half of the cilantro.
