  • 3 cloves9 gGarlicminced
  • 1 tbsp14 gOlive oil
  • 1 tbsp14 gUnsalted butter
  • 3½ cups840 gLow-sodium chicken broth
  • 1 cup (240 ml)240 gMilk, 2%
  • ⅔ cup shredded80 gCheddar cheeseshredded
  • 2 tsp10 gYellow mustard
  • 1 tsp1 gDried thyme
  • ½ tsp3 gSalt
  • ½ tsp1 gBlack pepper
  • 2 medium30 gGreen onionsthinly sliced

Steps

  1. Prepare the potatoes, yellow onion, carrot, celery, garlic and green onions first, then cut the chicken on a separate board and wash your hands after handling it.
  2. Heat the olive oil in a large pot over medium-high heat. Add the chicken and cook, stirring, until browned on the outside, about 5 minutes; it will finish cooking in the soup. Transfer the chicken to a plate.
  3. Lower the heat to medium and add the butter, yellow onion, carrot and celery. Cook until softened, about 6 minutes, then stir in the garlic and thyme for 1 minute.
  4. Add the potatoes and chicken broth, bring to a boil, then cover and simmer until the potatoes are very tender, about 15 minutes.
  5. Mash about half of the soup in the pot with a potato masher, leaving the other half chunky, for a creamy base with bites of potato.
  6. Return the chicken to the pot with the milk and simmer gently, without boiling, until the chicken reaches 165°F (74°C), about 5 minutes.
  7. Turn off the heat and stir in the cheddar and mustard until the cheese melts. Season with the salt and black pepper.
  8. Ladle into bowls and top with the green onions.
