Steps
- Before cooking, dice the onion, mince the garlic, grate the ginger, slice the carrot, cube the red potatoes, cube the queso fresco and chop the cilantro. Keep the queso fresco in the fridge until the end.
- Heat the canola oil in a large pot over medium heat. Add the onion and cook for 5 minutes until soft.
- Stir in the garlic and ginger and cook for 1 minute until fragrant, then add the curry powder and turmeric and stir for 30 seconds to toast.
- Add the carrot, red potatoes and vegetable broth. Bring to a boil, then lower the heat and simmer, partly covered, for 12 to 15 minutes until the potatoes are just tender.
- Stir in the coconut milk and return to a gentle simmer.
- Add the rice noodles, pushing them under the broth, and simmer for 4 to 6 minutes, stirring now and then, until tender.
- Stir in the spinach until wilted, then take the pot off the heat.
- Gently fold in the queso fresco and let it sit in the hot broth for 2 minutes to warm through and soften.
- Stir in the lime juice, ladle into bowls and top with the cilantro.
