- 6⅔ cups loosely packed200 gBaby spinach
- 2 tbsp30 gOlive oil
- 2½ tsp6 gPaprika (sweet or smoked)
- 1 tsp3 gGarlic powder
- ¾ tsp5 gSalt
- ¾ tsp2 gBlack pepper
- 8½ oz240 gPlain Greek yogurt, nonfat
- 1½ tbsp20 gYellow mustard
- 2 tbsp30 gLemon juice
- 1½ tsp10 gHoney
- 1 cup sprigs8 gFresh dillchopped
- ¼ cup30 gPumpkin seeds (pepitas)
Steps
- Preheat the oven to 425°F (220°C) and line a large sheet pan with foil.
- Make the rub: in a small bowl, stir together the paprika, garlic powder, black pepper and half of the salt.
- On the sheet pan, toss the potato and red onion with two-thirds of the olive oil and half of the rub, spread them out, and roast for 15 minutes.
- Meanwhile, rub the pork tenderloin with the remaining third of the olive oil and the remaining half of the rub.
- Push the potatoes and red onion to the sides, add the green beans around the edges, and set the pork in the center. Roast 20 to 25 minutes, until the potatoes are browned and the pork reaches 145°F (63°C).
- While it roasts, make the dressing: whisk the greek yogurt, mustard, lemon juice, honey, dill and the remaining half of the salt until smooth.
- Rest the pork for 3 minutes, then slice it thinly.
- Toast the pumpkin seeds in a dry skillet over medium heat for 2 to 3 minutes, until they start to pop.
- Toss the spinach with the hot potatoes, green beans and red onion right on the pan so the leaves wilt slightly.
- Divide the warm vegetables and spinach among plates, top with the pork, spoon the yogurt dressing over, and finish with the pumpkin seeds.
