  • 2 medium240 gBananavery ripe
  • 2 tbsp40 gMaple syrup
  • 1½ tbsp12 gCornstarch
  • 1 tsp4 gVanilla extract
  • ½ tsp1 gGround cinnamon
  • ¼ tsp0.5 gGround cardamom
  • ½ tsp1 gGround nutmeghalf for garnish
  • ⅛ tsp0.5 gSalt

Steps

  1. This nog is egg-free as requested, so it is thickened with banana and cornstarch instead of a cooked egg base.
  2. In a medium saucepan off the heat, mash the banana with a fork or potato masher until completely smooth.
  3. Whisk the cornstarch into a splash of the whole milk in a cup until no lumps remain.
  4. Add the remaining whole milk to the banana in the pot and whisk well, then whisk in the cornstarch mixture, maple syrup, cinnamon, cardamom, half of the nutmeg and the salt.
  5. Set over medium heat and cook, whisking often, until steaming and gently bubbling at the edges and thick enough to coat a spoon, 6 to 8 minutes.
  6. Take the pot off the heat and stir in the vanilla.
  7. Whisk hard for 30 seconds to make it frothy, then pour into 4 mugs and dust with the remaining half of the nutmeg.
  8. For an iced version, chill the nog in the fridge until cold, about 2 hours, whisk again and pour over ice.
