  • 1 tbsp15 gLemon juice
  • 2 medium30 gGreen onionsthinly sliced
  • 4 slices128 gWhole-wheat breadtoasted

Steps

  1. Prepare first: pat the tofu dry, dice the yellow onion, mince the garlic, chop the kale and slice the green onions.
  2. In a small bowl, stir the turmeric, cumin, smoked paprika, black pepper and half of the salt into the soy milk to make the seasoning sauce.
  3. Heat two-thirds of the olive oil in a large skillet over medium heat. Add the yellow onion and cook 4 to 5 minutes until soft and lightly golden.
  4. Crumble the tofu into the skillet with your hands into bite-size pieces. Cook, stirring occasionally, 5 to 6 minutes until some of the moisture cooks off.
  5. Pour the seasoning sauce over the tofu and stir gently for 2 to 3 minutes until the tofu is evenly golden and creamy. Transfer to a plate and cover to keep warm.
  6. Heat the remaining one-third of the olive oil in the same skillet. Add the garlic and cook 30 seconds until fragrant, then add the kale and the remaining half of the salt and cook 3 to 4 minutes, stirring, until wilted and tender. Toast the bread while the kale cooks.
  7. Take the kale off the heat and toss with the lemon juice.
  8. Divide the tofu scramble among four plates, scatter the green onions on top, and serve with the garlicky kale and the toasted whole-wheat bread.
