- 1¾ tsp10 gFish sauce
- 2 tbsp30 gLime juice
- ⅔ cup chopped10 gFresh cilantrochopped
Steps
- Prep first: dice the yellow onion, cube the sweet potato, chop the kale, slice the green onions (keeping whites and greens apart), grate the ginger and mince the garlic. Divide the ginger and garlic in half.
- In a bowl, mix the ground turkey, egg, breadcrumbs, green onion whites, half the ginger, half the garlic and the salt. Roll into about 24 meatballs, then wash your hands.
- Heat the canola oil in a Dutch oven over medium heat. Brown the meatballs in batches, about 2 minutes per side, and set them on a plate; they will finish cooking in the soup.
- In the same pot, cook the diced yellow onion for 4 minutes until soft. Stir in the remaining half of the ginger, the remaining half of the garlic, the turmeric and the coriander for 30 seconds.
- Add the sweet potato and chicken broth, bring to a boil, then simmer covered for 10 minutes.
- Stir in the coconut milk and return the meatballs to the pot. Simmer gently for 10 to 12 minutes, until the meatballs reach 165°F (74°C) in the center and the sweet potato is tender.
- Stir in the kale and cook 3 minutes until wilted. Season with the fish sauce and lime juice.
- Ladle into bowls and top with the green onion greens and cilantro.
