Steps

  1. Before you start, dice the yellow onion and green bell pepper, mince the garlic, shred the mozzarella and slice the green onions.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up, for 5 minutes until no longer pink.
  3. Add the diced yellow onion and green bell pepper and cook for 5 minutes until softened, then stir in the garlic for 30 seconds.
  4. Stir in the tomato paste, smoked paprika and chili powder and cook for 1 minute.
  5. Add the canned diced tomatoes, brown sugar, cider vinegar, black pepper and salt. Simmer for 8 to 10 minutes, stirring, until thick and the turkey reaches 165°F (74°C). Spoon the filling into a bowl and wipe out the skillet.
  6. Toast the whole-wheat bread slices in the dry skillet over medium heat, about 2 minutes per side, working in batches.
  7. Heat the broiler. Set the toasts on a baking sheet, pile the turkey filling evenly over them and top with the mozzarella.
  8. Broil 2 to 3 minutes until the mozzarella melts and bubbles. Scatter the sliced green onions over the toasts and serve two per person.
