Steps
- Prepare the vegetables first: grate half the red onion for the kofta and thinly slice the other half for the salad; mince the garlic and chop the mint and parsley.
- In a bowl, mix the ground turkey, breadcrumbs, grated red onion, garlic, half the mint, half the parsley, the cumin, oregano, half the salt and half the black pepper. Shape into 16 small oval kofta.
- Make the vinaigrette: whisk the balsamic, mustard, honey, the remaining salt, the remaining black pepper and 35 g (about 2½ tablespoons) of the olive oil in a jar or small bowl.
- Heat the remaining 15 g (1 tablespoon) of olive oil in a large skillet over medium heat. Cook the kofta 10 to 12 minutes, turning often, until browned and 165°F (74°C) in the center. Rest 5 minutes.
- While the kofta rest, warm the pita wedges in the same dry skillet for 1 minute per side.
- In a large bowl, toss the romaine, spinach and kale with the sliced red onion, cherry tomatoes, cucumber and olives and about three quarters of the vinaigrette.
- Divide the salad among 4 plates, top with the kofta, feta, and the remaining mint and parsley, drizzle on the rest of the vinaigrette, and serve with the warm pita.
