  • ¾ tsp4 gSalt
  • ½ tsp1 gBlack pepper
  • 1⅓ cups240 gCouscous, dry
  • 1¼ cups300 gWaterboiling

Steps

  1. Prep first: cube the turkey breast, chop the onion and red bell pepper, mince the garlic and chop the parsley. Season the turkey with half the salt and the black pepper.
  2. Heat half the olive oil in a Dutch oven over medium-high heat. Brown the turkey in one layer, about 5 minutes, then move it to a plate; it will finish cooking later.
  3. Add the remaining half of the olive oil, the onion and the red bell pepper; cook 5 minutes until soft. Stir in the garlic, cumin, paprika and oregano for 1 minute, then the tomato paste for 1 minute more.
  4. Pour in the coconut milk and chicken broth, scraping up the browned bits. Add the chickpeas and the turkey with its juices. Bring to a simmer, cover and cook gently 20 minutes, until the turkey reaches 165°F (74°C).
  5. Meanwhile, put the couscous in a bowl, pour over the boiling water, cover and let stand 5 minutes, then fluff with a fork.
  6. Stir the spinach into the stew until wilted, then add the lemon juice and the remaining half of the salt.
  7. Serve the stew over the couscous, topped with the parsley.
