- 4 cloves12 gGarlicminced
- 2½ tbsp grated15 gFresh gingerpeeled and grated
- 1½ tbsp20 gCanola oil
- 1 tbsp6 gCurry powder
- 2 tsp12 gFish sauce
- 2 tbsp30 gLime juice
- ¼ tsp2 gSalt
- ⅔ cup chopped10 gFresh cilantrochopped
- ½ tsp1 gCrushed red pepper
Steps
- Prepare first: cube the potatoes, slice the mushrooms, chop the onion and cilantro, mince the garlic and grate the ginger. Set aside a quarter of the mushrooms for the topping.
- Heat half the canola oil in a large pot over medium-high heat. Add the reserved quarter of the mushrooms and cook undisturbed 3 minutes, then stir and cook until browned, about 3 minutes more. Transfer to a plate.
- Lower the heat to medium and add the remaining half of the canola oil. Add the onion and the remaining three-quarters of the mushrooms and cook, stirring, until softened and the liquid has cooked off, about 8 minutes.
- Stir in the garlic, ginger and curry powder and cook until fragrant, about 1 minute.
- Add the potatoes, chicken broth and three-quarters of the coconut milk. Bring to a boil, then cover and simmer until the potatoes are very tender, about 20 minutes.
- Remove from the heat and blend with an immersion blender until smooth (or blend in batches in a blender, venting the lid).
- Stir in the fish sauce, lime juice and salt.
- Ladle into bowls, drizzle with the remaining quarter of the coconut milk, and top with the browned mushrooms, cilantro and red pepper flakes.
