Steps

  1. Preheat the oven to 425°F (220°C) and line two sheet pans with parchment.
  2. On the first pan, toss the sweet potato and red potato with one third of the olive oil, half of the salt and the black pepper; spread in one layer and roast 15 minutes.
  3. Meanwhile, on the second pan, toss the tofu with another third of the olive oil, the curry powder, the garlic powder and one quarter of the salt; push it to one side.
  4. Toss the broccoli with the remaining third of the olive oil and the remaining quarter of the salt, and spread it on the other side of the second pan.
  5. Put the second pan in the oven, stir the sweet potato and red potato, and roast both pans 25 minutes more, turning the tofu once, until the sweet potato and red potato are tender and browned and the tofu is crisp at the edges.
  6. While everything roasts, make the herb sauce: chop the basil, mint and garlic very finely, then stir them into the Greek yogurt with the lemon juice.
  7. Divide the roasted sweet potato and red potato among four bowls, top with the tofu and broccoli, spoon over the herb sauce and scatter with the pumpkin seeds.
