  • 1 tbsp3 gDried oregano

  • ½ tsp1 gBlack pepper

Steps

  1. Prepare first: cut the pork, mince the garlic, halve the tomatoes, slice the red onion and olives, chop the dill and crumble the feta. Grate 100 g of the cucumber and dice the remaining 200 g.
  2. Marinate the pork: in a bowl, toss the pork with half the olive oil, half the lemon juice, two-thirds of the garlic, the oregano, the black pepper and half the salt. Let it sit 15 minutes while the quinoa cooks.
  3. Cook the quinoa: bring the quinoa, the water and a quarter of the salt to a boil in a saucepan, cover, simmer on low 15 minutes, then rest off the heat 5 minutes and fluff.
  4. Make the tzatziki: squeeze the grated cucumber dry, then stir it into the Greek yogurt with the remaining garlic, the remaining lemon juice, the dill and the remaining salt. Chill until serving.
  5. Heat the remaining olive oil in a large skillet over medium-high heat. Sear the pork in a single layer, turning, 6 to 8 minutes until browned and it reaches 145°F (63°C). Rest 3 minutes.
  6. Divide the quinoa among four bowls. Top with the pork, the diced cucumber, the cherry tomatoes, the red onion, the olives and the feta, and spoon the tzatziki over each bowl.
