Steps
- Prepare the vegetables first: dice the onion and red bell pepper, seed and mince the jalapeño, mince the garlic, and peel and cube the sweet potato.
- Heat the olive oil in a Dutch oven over medium heat. Add the onion and red bell pepper and cook, stirring, until softened, about 6 minutes.
- Add the jalapeño and garlic and cook 1 minute until fragrant.
- Stir in the chili powder, cumin, smoked paprika and oregano, then the tomato paste, and cook 1 minute, stirring, until the paste darkens.
- Add the sweet potato, canned tomatoes with their juice and vegetable broth. Bring to a boil, then cover, lower the heat and simmer 15 minutes.
- Stir in the black beans and pinto beans and simmer uncovered 15 minutes, until the sweet potato is tender and the chili thickens; mash a few beans against the pot for a thicker texture.
- Add the frozen corn kernels and cook 5 minutes until hot. Stir in the salt and lime juice.
- Ladle into bowls and top with the cilantro and queso fresco.
