Strawberry Maple Green Tea Oat Latte

Ingredients

  • ⅓ cup30 gOld-fashioned rolled oats
  • 1¼ cups280 gWatercold
  • 1 cup sliced150 gStrawberriessliced
  • 1 tbsp20 gMaple syrup
  • ½ tsp1 gLemon zest
  • 1¼ cups (300 ml)300 gBrewed green teafreshly brewed, hot
  • ½ tsp2 gVanilla extract

Steps

  1. Brew the green tea first and keep it hot.
  2. Make the oat milk: blend the oats with the cold water for about 30 seconds, just until creamy, then strain through a fine sieve or cloth into a jug and discard the pulp. Short blending keeps it from turning slimy.
  3. In a small pot over medium heat, simmer the strawberries with the maple syrup and lemon zest for about 5 minutes, mashing with a fork until jammy.
  4. Pour the hot green tea into the pot and stir, then press the mixture through the sieve into a bowl to remove the seeds and pulp; rinse the pot.
  5. Return the strained strawberry tea to the pot, add the oat milk and vanilla, and warm over medium-low heat, stirring, until steaming; don't let it boil, or the oat milk will thicken.
  6. Whisk briskly for a light froth, divide between two mugs and serve hot.
