- 1 cup diced150 gAvocado
- 1½ medium160 gYellow onionthinly sliced
- ⅔ cup shredded80 gCheddar cheesethinly sliced or shredded
- 1 medium120 gTomatoesthinly sliced
- 1 tbsp15 gLime juice
- 1½ tbsp20 gOlive oildivided
- 1¼ tsp3 gPaprika (sweet or smoked)smoked
- 1 tsp3 gGarlic powder
- ¼ tsp2 gSalt
- ½ tsp1 gBlack pepper
Steps
- The pantry has no sourdough, so this uses whole-wheat bread; swap in sourdough slices of a similar weight if you have them.
- Heat half of the olive oil in a large skillet over medium heat. Add the onion and cook, stirring often, until soft and golden, 12 to 15 minutes. Move the onion to a plate and wipe out the skillet.
- While the onion cooks, mix the ground turkey with the smoked paprika, garlic powder, salt and black pepper. Shape into 4 thin oval patties about the size of the bread slices.
- Cook the patties in the skillet over medium-high heat, 4 to 5 minutes per side, until they reach 165°F (74°C) in the center. Move to a plate.
- Mash the avocado with the lime juice in a small bowl to make a spread.
- Brush one side of each bread slice with the remaining half of the olive oil. Lay 4 slices oiled side down and top each with half of the cheddar, a turkey patty, the caramelized onion, then the remaining half of the cheddar. Close with the other 4 slices, oiled side up.
- Cook the sandwiches in the skillet over medium-low heat, pressing with a spatula, 3 to 4 minutes per side, until the bread is crisp and the cheese melts.
- Open each sandwich, spread the avocado mixture inside, add the tomato slices, close, halve and serve hot.
