Steps

  1. Pat the pork shoulder dry and season it with half of the salt and the black pepper.
  2. Heat half of the olive oil in a Dutch oven over medium-high heat. Brown the pork in two batches, about 4 minutes per side, and transfer it to a plate.
  3. Lower the heat to medium and add the remaining half of the olive oil, the onion and the red bell pepper. Cook, stirring, until softened, about 6 minutes.
  4. Add the garlic, tomato paste, smoked paprika, oregano and red pepper flakes and stir for 1 minute until the paste darkens.
  5. Pour in the diced tomatoes and chicken broth, scraping up the browned bits. Return the pork and any juices, add the remaining half of the salt, and bring to a simmer.
  6. Cover and simmer gently over low heat for about 1 hour 30 minutes, stirring now and then, until the pork is fork-tender (well past 145°F (63°C)).
  7. Stir in the great northern beans and simmer uncovered for 10 minutes to thicken the sauce.
  8. Stir in the spinach until wilted, about 1 minute, then sprinkle with the parsley and serve.
