Steps
- Combine the quinoa with 380 g of the water in a small pot, bring to a boil, cover and simmer on low for 15 minutes, then let stand covered off the heat.
- While the quinoa cooks, toss the chicken thigh strips with half of the cornstarch.
- Make the sauce: whisk the soy sauce, honey, cider vinegar, toasted sesame oil, the remaining half of the cornstarch and the remaining 120 g of water in a bowl.
- Heat half of the canola oil in a large skillet over high heat. Add the chicken in one layer and sear, turning once, until browned and it reaches 165°F (74°C), about 6 minutes. Move the chicken to a plate.
- Add the remaining half of the canola oil to the skillet. Add the yellow onion wedges, red bell pepper and green bell pepper and stir-fry 4 to 5 minutes until crisp-tender and charred at the edges.
- Add the garlic and ginger and stir for 30 seconds until fragrant.
- Return the chicken to the skillet, stir the sauce, pour it in and toss for 1 to 2 minutes until glossy and thickened.
- Fluff the quinoa, spoon the stir-fry over it, and scatter the sesame seeds and sliced green onions on top.
