  • 2¼ tsp10 gToasted sesame oil
  • ½ tsp1 gCrushed red pepper
  • 2 medium30 gGreen onionsthinly sliced
  • 1½ tbsp12 gSesame seedstoasted

Steps

  1. Prepare all the vegetables first: cut the broccoli, slice the carrot, mince the garlic, grate the ginger and slice the green onion.
  2. Bring the quinoa and 400 g of the water to a boil in a small pot, cover, simmer on low for 15 minutes, then rest off the heat, covered, for 5 minutes and fluff.
  3. While the quinoa cooks, make the sauce: whisk the soy sauce, honey, cider vinegar, toasted sesame oil, red pepper flakes, half the cornstarch and 60 g of the water in a small bowl.
  4. Toss the chickpeas with the other half of the cornstarch until lightly coated.
  5. Heat two-thirds of the canola oil in a large skillet over medium-high heat. Add the chickpeas in one layer and cook, shaking now and then, for 8 to 10 minutes until golden and crisp. Move them to a plate.
  6. Add the remaining third of the canola oil to the skillet. Add the carrot and broccoli and stir-fry for 4 minutes, adding the last 20 g of the water if the pan gets dry, until bright and tender-crisp.
  7. Add the garlic and ginger and stir-fry for 30 seconds until fragrant.
  8. Stir the sauce, pour it into the skillet and cook for about 1 minute until glossy and thickened. Return the chickpeas and toss to coat.
  9. Spoon the stir-fry over the quinoa and top with the green onion and sesame seeds.
