Steps
- Bring the brown rice and 500 g of the water to a boil in a saucepan, cover, reduce to low and simmer 40 to 45 minutes until tender; rest covered off the heat.
- While the rice cooks, toss the pork chop strips with half the cornstarch and one third of the low-sodium soy sauce; set aside.
- Make the sauce: whisk the remaining 120 g of water, the remaining half of the cornstarch, the remaining two thirds of the low-sodium soy sauce, the honey, the cider vinegar and the toasted sesame oil in a small bowl.
- Toast the sesame seeds in a dry large skillet over medium heat for 2 to 3 minutes until golden; tip them onto a plate.
- Heat half the canola oil in the skillet over high heat. Add the pork in one layer and sear 3 to 4 minutes, turning once, until browned and it reaches 145°F (63°C); transfer to a plate and rest 3 minutes.
- Heat the remaining half of the canola oil in the skillet. Add the red onion, red bell pepper and green bell pepper and stir-fry 3 to 4 minutes until crisp-tender.
- Add the garlic and ginger and stir-fry 30 seconds until fragrant.
- Return the pork and its juices to the skillet, stir the sauce, pour it in and toss 1 to 2 minutes until glossy and thickened.
- Fluff the rice and divide among 4 bowls. Top with the stir-fry, then scatter the toasted sesame seeds and green onion over each.
