  • 8 slices256 gWhole-wheat bread8 slices (closest pantry bread to sourdough)
  • 1 container (6 oz)150 gPlain Greek yogurt, nonfat
  • ⅔ cup sprigs6 gFresh dillfinely chopped
  • 2½ tbsp chopped10 gFresh parsleyfinely chopped
  • 3 cloves9 gGarlicminced
  • 1 tbsp15 gLemon juice
  • 1½ medium160 gYellow onionthinly sliced
  • 2¾ cups sliced200 gWhite mushroomssliced
  • 3 oz80 gPart-skim mozzarellathinly sliced or shredded
  • 1½ tbsp20 gOlive oil
  • ½ tsp3 gSalt
  • ¾ tsp2 gBlack pepper

Steps

  1. Make the spread first: in a bowl, stir together the greek yogurt, dill, parsley, one-third of the garlic, the lemon juice and a small pinch of the salt. Chill until needed.
  2. Season the top sirloin steak on both sides with half of the remaining salt and half of the black pepper.
  3. Heat half of the olive oil in a large skillet over medium-high heat. Sear the top sirloin steak 4 to 5 minutes per side until it reaches 145°F (63°C) inside, then move the steak to a board and rest at least 3 minutes.
  4. Lower the heat to medium and add the remaining half of the olive oil. Cook the onion and mushrooms, stirring, 8 to 10 minutes until browned and soft.
  5. Stir the remaining two-thirds of the garlic, the rest of the salt and the rest of the black pepper into the onion and mushrooms; cook 1 minute, then scoop onto a plate.
  6. Slice the rested top sirloin steak thinly across the grain.
  7. Wipe the skillet and set over medium heat. Lay 4 slices of the bread in the pan, top each with the sliced top sirloin steak, the onion-mushroom mixture and the mozzarella, then cover and cook 3 to 4 minutes until the bread is crisp and the cheese melts.
  8. Meanwhile toast the other 4 slices of bread in the skillet or a toaster, then spread them with the yogurt herb spread.
  9. Set the spread-side down slices on top of the melts, cut in half and serve hot.
