Steps
- Prep first: dice the onion, carrot and celery, mince the garlic, cube the butternut, chop the kale and parsley, and crumble the rosemary.
- Heat two-thirds of the olive oil in a Dutch oven over medium heat. Add the onion, carrot and celery and cook, stirring, until soft, about 8 minutes.
- Stir in the garlic, rosemary and red pepper flakes and cook until fragrant, about 1 minute.
- Add the butternut, chickpeas, vegetable broth and water. Bring to a boil, then cover partly and simmer until the squash is very tender, about 25 minutes.
- Ladle about a third of the soup into a blender, vent the lid, blend until smooth and stir it back into the pot (or use an immersion blender briefly) for a creamy body.
- Stir in the kale and simmer until wilted and tender, about 5 minutes.
- Remove from the heat and stir in the lemon juice, half of the Parmesan, the black pepper and the salt.
- Ladle into bowls and top with the remaining half of the Parmesan, the parsley and a drizzle of the remaining olive oil.
