  • ½ tsp3 gSalt
  • ½ tsp1 gBlack pepper
  • ½ lime, juiced22 gLime juice
  • ½ cup chopped8 gFresh cilantrochopped

Steps

  1. Heat the broiler. Place the red bell pepper halves skin side up on a foil-lined sheet and broil 8 to 10 minutes until blackened. Cover with foil for 10 minutes, then peel off the skins and chop the flesh.
  2. Season the beef chuck with the salt and black pepper. Heat half the olive oil in a Dutch oven over medium-high heat and brown the beef in batches, about 6 minutes per batch. Move the beef to a plate.
  3. Lower the heat to medium and add the remaining half of the olive oil, then the onion and jalapeño. Cook 5 minutes until soft, then stir in the garlic for 30 seconds.
  4. Stir in the tomato paste, chili powder, cumin, smoked paprika and oregano and cook 1 minute until fragrant.
  5. Add the roasted red pepper, canned tomatoes and beef broth, scraping up the browned bits. Return the beef and its juices to the pot.
  6. Bring to a boil, cover, reduce to a gentle simmer and cook about 1 hour 45 minutes, stirring now and then, until the beef is fork-tender (well past 145°F / 63°C).
  7. Stir in the black beans and simmer uncovered 15 minutes to thicken.
  8. Turn off the heat, stir in the lime juice and serve topped with the cilantro.
