  • ½ tsp1 gBlack pepperdivided
  • 2 tsp2 gDried thyme
  • ¾ tsp2 gPaprika (sweet or smoked)
  • ¾ tsp2 gGarlic powder
  • 1 medium180 gApplecut into thin matchsticks
  • 2 cups shredded140 gGreen cabbagefinely shredded
  • 1 tbsp15 gApple cider vinegar
  • ⅔ cup shredded80 gCheddar cheesethinly sliced
  • 2 cups loosely packed60 gBaby spinach
  • 8 slices256 gWhole-wheat bread

Steps

  1. Preheat the oven to 400°F (200°C) and line a small baking dish or sheet with foil.
  2. Pat the turkey breast dry. Rub it with half of the olive oil, then season it with two-thirds of the salt, half of the black pepper, the thyme, the paprika and the garlic powder.
  3. Roast the turkey breast for 25 to 35 minutes, until the thickest part reaches 165°F (74°C).
  4. Move the turkey to a plate, let it cool for 15 minutes, then refrigerate it for about 30 minutes until cold.
  5. While the turkey chills, make the slaw: in a bowl, toss the apple and cabbage with the cider vinegar, the remaining half of the olive oil, the remaining third of the salt and the remaining half of the black pepper. Let it sit in the fridge to soften slightly.
  6. Slice the cold turkey thinly across the grain.
  7. Lay out the whole grain bread slices. On four slices, layer the spinach, then the cheddar, then the sliced turkey.
  8. Drain any liquid from the slaw, pile the apple-cabbage slaw over the turkey, and top with the remaining four bread slices. Press gently, cut in half and serve.
