Steps
- Preheat the oven to 425°F (220°C). Toss the potato wedges with the olive oil and paprika on a lined sheet and roast 30 to 35 minutes, turning once, until crisp; this is the side.
- While the potatoes roast, slice the beef, onion, green bell pepper and mushrooms, mince the garlic, and wash and dry the romaine leaves.
- Season the beef with the black pepper and the salt.
- Heat half the canola oil in a large skillet over high heat. Sear the beef in a single layer 2 to 3 minutes, stirring once, until browned and cooked to 145°F (63°C); move it to a plate to rest 3 minutes.
- Lower the heat to medium-high and add the remaining half of the canola oil. Cook the onion, green bell pepper and mushrooms 6 to 8 minutes until soft and browned, then stir in the garlic for 30 seconds.
- Return the beef to the skillet, add the Worcestershire sauce and toss. Divide into four mounds in the pan.
- Lay the mozzarella over the mounds, cover the skillet and cook off the heat 1 to 2 minutes until melted.
- Spoon each cheesy mound into stacked romaine leaves and serve with the roasted potato wedges.
