  • 2 tsp10 gApple cider vinegar
  • ¾ tsp5 gSalt
  • ½ tsp1 gBlack pepper
  • 2½ tbsp chopped10 gFresh parsleychopped
  • ¼ cup60 gSour cream

Steps

  1. Preheat the oven to 325°F (165°C). Pat the beef chuck dry and season it with half of the salt and the black pepper.
  2. Heat half of the olive oil in a Dutch oven over medium-high heat. Brown the beef chuck in two batches, about 4 minutes per batch, and move it to a plate.
  3. Add the remaining half of the olive oil, the onion, the red bell pepper and the green bell pepper to the pot. Cook, stirring, until softened, about 6 minutes.
  4. Stir in the garlic, paprika and cumin and cook for 30 seconds, then stir in the tomato paste and cook 1 minute.
  5. Add the canned tomatoes and the water, scraping up the browned bits. Return the beef chuck and its juices and bring to a simmer.
  6. Cover and braise in the oven for 1 hour 15 minutes.
  7. Stir in the barley and the remaining half of the salt, cover, and return to the oven for 45 to 50 minutes, until the beef is fork-tender and the barley is cooked; the beef will be well past 145°F (63°C).
  8. Stir in the cider vinegar. Serve in bowls topped with the sour cream and the parsley.
