- 1 tbsp15 gOlive oil
- 1½ tsp3 gGround cumin
- 2 tsp2 gDried oregano

- 1 lemon, juiced45 gLemon juice
- 2 tsp4 gLemon zest
- 1 cup sprigs8 gFresh dillchopped
- ¾ tsp4 gSalt
- ½ tsp1 gBlack pepper
Steps
- Prepare all vegetables and the chicken before you start: chop the onion, slice the carrot and celery, cube the potatoes, mince the garlic and chop the dill.
- Heat the olive oil in a Dutch oven over medium-high heat. Season the chicken thighs with half of the salt and half of the black pepper, then brown them for about 5 minutes; they will finish cooking in the broth.
- Add the onion, carrot and celery and cook for 5 minutes until the onion softens.
- Stir in the garlic, cumin, oregano and turmeric and cook for 1 minute until fragrant.
- Pour in the chicken broth, add the potatoes, and bring to a boil. Reduce the heat and simmer, partly covered, for 20 minutes until the potatoes and carrots are tender and the chicken reaches 165°F (74°C).
- Stir in the coconut milk and heat gently for 2 minutes without boiling.
- Add the spinach and stir until wilted, about 1 minute.
- Off the heat, stir in the lemon juice, lemon zest, the remaining half of the salt and the remaining half of the black pepper.
- Ladle into bowls and scatter the dill over the top.
