  • 2 tsp2 gDried oregano
  • 1¾ tsp2 gDried rosemary
  • 2½ tbsp35 gOlive oil
  • ¾ tsp4 gSalt
  • ¾ tsp2 gBlack pepper
  • 3½ medium400 gTomatoesseeded and diced
  • ½ medium60 gRed onionfinely diced
  • ⅔ cup leaves15 gFresh basiltorn
  • 2¾ tsp15 gBalsamic vinegar
  • 4 cups loosely packed120 gBaby spinach

Steps

  1. Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment.
  2. Toss the red potatoes with two-thirds of the olive oil, the rosemary, half the salt and half the black pepper. Spread them on one side of the pan and roast 15 minutes.
  3. Meanwhile, in a bowl mix the ground turkey, egg, breadcrumbs, half the Parmesan, half the garlic, the oregano, one-quarter of the salt and the remaining half of the black pepper. Roll into about 20 meatballs.
  4. Stir the potatoes, then place the meatballs on the empty side of the pan. Roast 18 to 20 minutes, until the potatoes are golden and the meatballs reach 165°F (74°C) in the center.
  5. While they roast, make the tomato salsa: combine the tomato, red onion, the remaining half of the garlic, the basil, the balsamic, the remaining one-third of the olive oil and the remaining one-quarter of the salt. Let it stand.
  6. Divide the spinach among four bowls and top with the hot roasted potatoes so the spinach wilts slightly.
  7. Add the turkey meatballs, spoon the tomato salsa over, and sprinkle with the remaining half of the Parmesan.
