Ingredients

  • 1 lb500 gTurkey breast, boneless skinless
  • 2 tbsp25 gOlive oildivided
  • 2 tsp2 gDried thyme
  • ¾ tsp2 gPaprika (sweet or smoked)
  • ¾ tsp2 gGarlic powder
  • ½ tsp3 gSaltdivided
  • ½ tsp1 gBlack pepper
  • 1 can, drained254 gChickpeas, canned, drained and rinsed
  • 2 tbsp30 gTahini
  • 2 tbsp30 gLemon juice
  • 1 clove3 gGarlicminced
  • 1 tsp2 gGround cumin
  • 2 tbsp30 gWatercold
  • 8 slices256 gWhole-wheat bread8 slices (use sourdough slices if you have them)
  • 1¼ cups chopped150 gApplecored and very thinly sliced
  • 2 cups loosely packed60 gBaby spinach
  • 3 tbsp chopped30 gRed onionvery thinly sliced

Steps

  1. Preheat the oven to 400°F (200°C) and line a small baking sheet with foil.
  2. Pat the turkey breast dry. Rub it with about 10 g (2 teaspoons) of the olive oil, then season with the thyme, paprika, garlic powder, black pepper and 2 g of the salt.
  3. Roast the turkey breast for 30 to 40 minutes, until the thickest part reaches 165°F (74°C). Let it rest 10 minutes, then refrigerate for about 30 minutes until cold.
  4. While the turkey roasts and chills, make the hummus: blend the chickpeas, tahini, lemon juice, garlic, cumin, the remaining 1 g of salt and the remaining olive oil in a food processor. Add the cold water a little at a time and blend until very smooth. Chill until needed.
  5. Slice the apple and red onion just before assembling so the apple stays crisp.
  6. Slice the cold turkey breast thinly across the grain.
  7. Spread the hummus evenly over one side of all the bread slices.
  8. Layer the spinach on four slices, then add the turkey, apple and red onion. Top with the remaining bread, hummus side down, cut in half and serve cold.
