- 3¼ cups720 gVegetable broth
- 2½ medium300 gSweet potatoespeeled and cut into 1-inch cubes
- 1½ cups254 gGreat northern or cannellini beans, canned, drained and rinsed
- 4¾ cups chopped100 gKalestems removed, chopped
- 2 tsp10 gApple cider vinegar
Steps
- Prepare all vegetables first: chop the onion, slice the carrot and celery, mince the garlic, cube the sweet potato and chop the kale.
- Pat the pork shoulder dry and toss it with the flour, half of the salt and the black pepper.
- Heat half of the olive oil in a Dutch oven over medium-high heat. Brown half of the pork on all sides, about 5 minutes, and move it to a plate.
- Add the remaining half of the olive oil and brown the rest of the pork the same way, then move it to the plate.
- Lower the heat to medium. Add the onion, carrot and celery and cook, scraping up the browned bits, until softened, about 6 minutes.
- Stir in the garlic, tomato paste, rosemary and thyme and cook for 1 minute until fragrant.
- Pour in the vegetable broth, return the pork and its juices to the pot, and bring to a simmer. Cover and simmer gently for 1 hour.
- Add the sweet potato and the great northern beans. Cover and simmer until the pork is fork-tender and the sweet potato is soft, about 30 minutes; the pork will be well past 145°F (63°C).
- Stir in the kale and simmer uncovered until wilted and the stew has thickened slightly, about 5 minutes.
- Stir in the cider vinegar and the remaining half of the salt, then ladle into bowls.
